White Chocolate Oreo Rice Krispie Treats

Lady luck has been sitting on my shoulder. We found a twenty dollar bill at the park, and used our new found treasure to enjoy coffee and juice outside with the kids after riding bikes. The people watching and coffee are what one would expect in Santa Cruz...amzaing. I call this one damn good afternoon. Just as good as these Rice Krispie treats. Simple, fast and easy. If you find one in your lunch box then you too have found lady luck. 
    Cereal, mini marshmallows, Oreos and white chocolate. A combination made from the gods.
 Crushed Oreos
 Melt marshmallows with a bit of butter. 
 Add the melted marshmallows to the cereal and Oreo mixture stir to combine and press into a pan. No baking involved.
I made mine fancy by melting white chocolate and drizzling it over the top. Once cooled cut into squares.

White Chocolate Oreo Rice Krispie Treats


Ingredients
6 cups of Rice Krispie Cereal
20 Oreos chopped or smashed
5 cups mini marshmallows
3 Tablespoons butter
Melted white chocolate for drizzle (optional)

Spray a 9x13 dish with cooking spray
In a large bowl, pour reassured Rice Krispie Cereal

Chop or mash Oreos. You can do this by putting them in a Ziploc bag. You want to have the Oreos be a variety of sizes from chunky to finely crushed.

Add the Oreos to the Rick Krispy cereal and stir to combine.

In a medium sauce pan, heat butter and marshmallows together over medium heat, stirring constantly, until they melt together. 

Pour melted marshmallows over the cereal mixture and use a spatula sprayed with non-stick cooking spray to quickly combine all the ingredients. As soon as the cereal is combined, spread the mixture into the prepared dish. Use the spatula to press the mixture down in the dish to flatten. 

Let them sit until completely cooled.  If you want, drizzle with melted white chocolate. I put my dish in the freezer to get the chocolate to set and to make it easier to cut into squares. 

The treats can be stored in an airtight container at room temp for about 3-4 days. Enjoy!
