Baked Kale Chips

I know, I know... I am late to the party. Been there done and done that!  You snooze you loose...
Alright, alright... I get it. I really do!!  Earlier this year these chips were all over the web and have become quite popular.  I have been dying to try them so here it goes. 
Baked Kale chips are really a fun way to create something that is crispy like a chip with a lot of flavor and almost no fat. Warning... the nutty flavor and crispy goodness will make you want to eat them all. I'm just saying.

Baked Kale Chips
Makes about 4 to 6 cups of baked chips

1 large bunch of organic kale (cleaned and well dried)
1/2 tablespoon olive oil ( you could probably use even less if you desire)
1 large pinch of salt
1 pinch of paprika or any spice you desire
a scattering of sesame seeds
a splash of apple cider vinegar ( a good squeeze of lemon would also be fabulous) Oh the possibilities.

Trim off the stems and the thick center rib.  I left some of the smaller center ribs but if you want remove them all you can. Cut into large pieces. In a large bowl mix the kale with the olive oil, and other seasonings.  Pop them in the oven bake at 300 degrees until crispy about 20 min. Let cool and then eat them up. I crushed up some chips and sprinkled them over cottage cheese for lunch... damn that was good!

Time to get dirty!!!!

  8. I make these once a week for the kids. They rarely make it out of the oven as my kids eat them as I am pulling the tray out. Yours are much fancier. I merely put a wee bit of olive oil on it with a touch of kosher salt. Set them on a wire rack on the sheet pan and bake for 18 mins. Sooooooooooo Good! yum

  9. I'm going to try these tonight! Think my little guy (16 mon) who doesn't like veggies, but LOVES carbs will eat them!?!
