Blueberry Bars and Lemon Frozen Yogurt


I always forget how easy crumb bars are to make.  These bars are so simple when you are pressed for time or have a lot to do. For example, hosting a BBQ for family and good friends while taking care of a giggly baby, and most importantly, trying to watch as much World Cup Soccer as you possibly can. An easy dessert like a crumb bar can save the day. These bars require simple fresh ingredients and they go well with any type of frozen delight.


I made the frozen yogurt the night before using a Greek style yogurt, fresh lemon juice and agave syrup. Tart and tangy to go along with the sweet buttery bars.

I also got to use my handy dandy ice cream maker... (Dear ice cream maker, I am so sorry I always forget about you... thank you for doing such a good job!!!)
Lemon Frozen Yogurt
Adapted From David Lebovitz

3 cups plan whole milk Greek style yogurt
Zest of one lemon
Juice from one lemon
2/3 cup sugar
1 tablespoon agave nectar ( you could also use honey)
Pinch of salt

Blend together. Pour the mixture in a medium size bowl and refrigerate for about an hour. Freeze in your ice cream maker according to the manufacturer's instructions... Enjoy.

Blueberry Crumb Bars

1 cup sugar
1 teaspoon baking powder
3 cups flour
2 sticks cold butter
1 egg
1/4 teaspoon salt
Zest of one lemon
2 pints blueberries
1/2 cup sugar
4 teaspoons corn starch

Preheat oven to 375

Stir together 1 cup sugar, flour and baking powder. Mix in salt and lemon zest. Using a fork or (the new awesome pastry cutter I got for mother's day) cut in the butter and egg. They dough will get very crumbly. Pat half the dough in a greased pan. (I used a 9x13 pan)

In another bowl mix together the blueberries, 1/2 cup sugar, cornstarch and lemon juice. Mix together. Sprinkle the blueberries over the crust. Crumble the remaining dough over the berry layer.

Bake for about 45 minutes, until the top is golden brown  (or have your husband watch the bars so you can sneak in some World Cup action.)  Let cool before cutting into squares. Eat and let the happiness begin!!
