Banana Bread Muffins


Whew!!! I have been so busy lately, so busy indeed. I even forgot about these bananas.
Well, you now know what has to be done. 
A quick and easy one two punch of bananas, melted butter, sugar and...ahem... bourbon.   Yes, these banana muffins are just what a busy week calls for..... I hear them calling!

Banana Bread Muffins
Adapted from Martha Stewart's Cupcakes

3 to 4 ripe bananas mashed
1 & 1/2 cups flour
1 teaspoon baking soda
1 stick melted butter (unsalted)
1 egg
3/4 cup light brown sugar
1 teaspoon vanilla extract
1 and 1/2 tablespoons bourbon... (optional)
1 teaspoon cinnamon
1/2 teaspoon nutmeg (freshly ground if possible)

Makes about 16 medium sized muffins. You can also pour into a loaf pan for the good old traditional banana bread.

Preheat oven to 350 degrees. Line muffin tins with paper liners.
Melt butter in saucepan. Once melted and slightly cooled mix butter into a large bowl with the mashed bananas. Mix in the sugar, egg, vanilla and bourbon. Then add the cinnamon and nutmeg. Sprinkle the baking soda and salt over the mixture and stir to incorporate. Add the flour last and mix until combined.

Pour evenly into the prepared muffin tin, about 3/4ths of the way full. Bake for about 18 to 20 minutes until the tops are slightly golden brown and a cake tester comes out clean. Remove from oven. Let sit for about 5 minutes until you can transfer them to wire rack. Cool (or eat warm) and sit back and think..."damn that was so easy to make and thank god it is the weekend."
Time to get dirty!!!

  1. Mmmmm...I bet that bourbon rounds out the flavor of the bananas nicely. These sound delicious- and I've always got speckled bananas hanging around!
