Chocolate Chunk Cookie Cupcakes... Yes!!!

So, not to be too "mediocre" I made something simple and easy for a work meeting. Yes, I know work meetings are very uninspiring. However, when you add some dark chocolate, sugar and butter together....
it can make for a very inspirational, thought provoking event.
As well as a delightful, just for fun, and enjoyable morning.

These chocolate chunk cookie cupcakes are really something to smile about... That is  why we do this???? Right???




Chocolate Chip Cookie Cupcakes
Adapted from Martha Stewart's Cupcakes

Inspired by a favorite cookie these cupcakes are anything but mediocre
Makes about 20 cupcakes

1 & 1/2 cups all purpose flour
3/4 teaspoon salt
1 cup ( 2 sticks butter)
3/4 cups granulated sugar
3/4 packed brown sugar
3 large eggs
1 and 1/2 teaspoon vanilla extract
1 cup milk
8 oz chocolate ( the recipe calls for semi-sweet) I used dark and really like the chocolate flavor.  Used a bit less then 8 oz as that was what I had in my pantry.

Preheat oven to 375
Line a muffin tin with paper liners

Whisk flour and salt together

With a mixer on med / high speed cream butter and both sugars. Add the eggs one at a time. Beat in vanilla. Scrape down the side of the bowl as needed.

Reduce speed to low. Add flour mixture, alternating with the milk, and beating after each combination.
Stir in chocolate chunks.

Fill each tin with about 1/4 cup filling. Bake for about 20 min. Rotate the tins halfway through the baking time. The cupcakes are done when they are golden brown and a cake tester come out clean.

Cool completely before removing from the tin. These can be stored for up to 2 to 3 days. If they last that long.

  7. I agree with Lynn, These wouldn't last very long at my place either! These look delicious, and well, my fellow is a cookie monster!! I would have to hide some so I could enjoy them, so he couldn't eat them all! Lol
