Red Pepper Salad


Hot damn.... who knew that peppers, some onions and feta could meet, mingle and make the most fresh lovely salad for the summer..... Summer love??
They really wanted to hang out and get acquainted... and low and behold they did. Here they are with their tops off!
This salad combines all of my favorite veggies with a bit of salty feta for some flare. (Who does not love salty flare... Come on...who???)
It is crunchy, sweet, salty, and can I say it??...can I??...good for you!!!

Make this ahead for a BBQ or picnic.  You can serve this dish right away or have it sit and party overnight to have the veggies soak up more flavor.  That option is up to you.

Red Pepper Feta Salad

Serves 6 to 8

1/4 cup Red wine vinegar

1 teaspoon sugar
1/4 cup cold water

3 to 4 Red and/or Orange Peppers.  You can mix and match the colors.  I hate green peppers so they were not invited to this party
1/2 one red onion diced
1 English cucumber diced
1/2 grape or cherry tomatoes
1/4 cup pitted Kalmata olives
Crumbled Feta cheese (you can choose the amount you desire)

Salt and Pepper to taste

Mix together the red wine vinegar, water, sugar and about 1/4 teaspoon of salt in a bowl. Add the diced red onions and set it aside. This will take out some of the "bite" that red onion can have. It also softens the onions a bit.

Chop the peppers, cucumber and feta (if it is in a block) into large chunks about 1/2 inch in size.
Add them to a large bowl with the grape tomatoes and olives. Drain the onions (reserving the vinegar mixture.)

Add the onions and about 1/4 cup of the vinegar mixture to the bowl. You can add a drizzle of olive oil if you want. (I felt that the salad did not need it) Season with salt and black pepper.

Toss and serve.

A great addition to any party!!!

  1. Adorable fur-kids..I have three of my own! I luv salty flare and feta does the trick. Gorgeous summer salad...every ingredients is delicious and really like the use of kalamata and feta.
