Chocolate Almond Brownies

Baking, Blogging and Brownies. Exactly what I had planned on my day off. All while trying to keep a watchful eye on a giggly 7 month old. Easy right??? No wonder this recipe from David Lebovitz caught my eye. It calls for simple ingredients which I had on hand and it can be mixed in one medium sized sauce pan. Therefore the clean up is quick and easy, which is a plus in my kitchen.  The fudge brownie is very dense and the additions can be endless. I went for some chopped almonds as that is what I lying around. But you could add any kind of nut or even some coco nibs to make the chocolate factor go through the roof. 
I used Scharffen Berger Semisweet chocolate which melts easily and is simply wonderful.
Make sure you wait until these brownies are completely cool to remove from the pan. I am very impatient and could not resist taking them out early which made them much harder to cut. These brownies will keep for about 4 days and can be frozen for about a month. Perfect for an upcoming summer BBQ.

Chocolate Almond Brownies

Serves 9-14 brownies, pending on how big you want to cut them

Ingredients
6 tablespoons butter, unsalted cut into pieces
8 oz semi-sweet chocolate chopped
3/4 cup sugar
1 teaspoon vanilla extract
2 large eggs at room temperature
1/4 cup all purpose flour
About 1 cup toasted chopped almonds ( you can mix and match here)

Preheat oven to 350. Line a 9 inch baking pan with butter parchment or tin foil

In a medium saucepan melt butter then add the chopped chocolate and stir on low heat until melted

Remove from the heat and add the sugar and vanilla. Stir until combined. Then add the eggs beating  after each addition.

Add the flour and stir very enthusiastically for about a full minute. Until the mixture becomes smooth and shiny. Stir in your chopped nuts or extra added additions.

Pour into the prepared pan and bake for about 30 minutes. Until the brownie is set. Let cool ( something I have a hard time doing.)
Slice Serve and Smile!!

  2. You achieved the perfect shiny crackly crust on top of your brownies! They look so moist and fudgy. Really lovely! I'm always on the lookout for a new brownie recipe to try. Maybe this one will be next! Thanks for posting.
