Lemon Sugar Cookies


The sun is shining and summer is almost here.... So why I am frowning? Well, sometimes life can suck it... I mean a big suck it... When work sucks, traffic sucks and all you want to do is scream! You get my point. Life can throw you a screw ball and make your pucker up (like you just ate a lemon) and want to say F*&#K...

AHHH.. Lemons..OK I am getting a bit more happy...lemon zest... maybe a smile is starting to creep out... Lemon and sugar and butter... YES!!
Lemon sugar cookies.. Instant smile.  Life is good, warm, and golden brown.  A simple delight at times can make you feel so much better.
Enjoy these giant cookies and remember when life gives you lemons... instead of lemonade make a giant kick ass cookie.


Lemon Sugar Cookies
Adapted from Martha Stewart's Cookies: The Very Best Treats to Bake and to Share 

Ingredients
3 cups all purpose flour
1 teaspoon baking soda
1/4 + a pinch of course salt
1 & 3/4 granulated sugar
1/4 packed light brown sugar
1 & 1/2 table spoon lemon zest
1 cup ( 2 sticks) unsalted butter
2 large eggs at room temp
1 & 1/2 tablespoons fresh lemon juice
Sanding sugar for the top.. although I used raw sugar and it worked just fine

Pre-heat oven to 350
Mix flour, baking soda, and salt in a bowl and set aside

In a mixer with a paddle attachment add the light and dark sugar and lemon zest. Mix for about 1 min at med speed. Add the butter and mix until the butter and sugar and pale and fluffy. Depending on your mixer this can take 1 to 3 min. Mix in eggs one at at time, and then the lemon juice.

Reduce the speed of the mixer to low and slowly add the flour mixture.

Using a ice cream scoop or a tablespoon, drop the dough onto parchment. About three inches apart. These cookies do spread. Flatten a bit and then add the sanding sugar or raw sugar. This gives the cookie a bit or a crunch on top.

Bake until golden brown ( 15 minutes.) Transfer to a rack to cool. Once the cookies have cooled you can remove them with a spatula to a wire rack to cool completely. The cookies can be stored at room temp for about 3 days. Unless your dog eats them up

Time to get dirty!!

  4. Super cute doggy! Did he/she manage to eat any of your gorgeous looking cookies? :) I'd do it if I were that close because lemon cookies are seriously the most delicious things ever. I had a recipe I used for a long while, but can no longer find it. Thanks very much for the reminder and a new recipe!
